Rolled red fruit cookie

INGREDIENTS (8 people)

For the dough

  • 4 organic eggs
  • 100g whole grain flour
  • 80g brown sugar
  • 2 tsp liquid vanilla

For the fruit spread

  • 100g organic strawberries
  • 100g organic raspberries
  • 100g organic blackberries
  • 100g organic blackcurrants
  • 2 tsp brown sugar


  1. Separate the egg whites and yellows. Add sugar to the yellows and mix  until a white mixture appears. Add flour, vanilla and mix again
  2. Beat the egg whites with a pinch of salt. Add to the “step 1” preparation and mix carefully until you get a homogeneous mixture. On a cooking paper pan going in the oven, spread the dough equally throughout the pan. Cook at 180°C during 7 min
  3. Take out the cookie from the oven and roll it in a clean tissue paper. Cool down.
  4. In a pan, cook the red fruits at medium fire. During the middle of the cooking time, add the 2 tsp of brown sugar and mix again. Once the fruits are cooked, place them in a colander to eliminated the seeds
  5. De-roll the cookie, spread the red fruits and roll it again


Incorporate the egg whites slowly to the preparation so that they don’t “break”.
