INGREDIENTS (4 people)
- 2 organic eggplants
- 3 organic chicken breasts
- 6 tsp of tomato sauce
- 2 tsp of Virgin Olive Oil
- Parmesan
- Black Pepper
- Paprika
- Fresh basil
PREPARATION
- Preheat the oven at 180°C. Wash the eggplants and cut them in two
- Take the flesh out with a spoon and place it in a bowl, add the tomato sauce, pepper and paprika
- In a pan, cook the chicken cut in dices with Olive Oil, put in the bowl and mix well
- Garnish the eggplant with the chicken spread (step 2), add some parmesan, and place in the oven for 15 min
