Ingredients (for 4 people)
- 250g of lentils
- 2 oranges
- 2 sliced carrots
- 1 onion
- 3 cl. olive oil
- 1 cl. of sherry vinaigrette
- salt
- pepper
Steps
- 1.Rinse the lentils and drain. Pour them into a saucepan with the carrots and cover with cold water (about twice their volume). Cover and bring to the boil over medium heat. Leave them to cook gently for 45 min, adding salt while they are cooking. Drain and allow to cool for 1 hour.
- 2. Meanwhile, peel and chop the onion. Rinse and cut tomatoes in half.
- 3. Put the cold lentils in a salad bowl. Add the tomatoes, onion, oil and vinegar and mix. Keep fresh until ready to serve.
Tip
Lentils are rich in iron but this type of iron is hard to digest. Think about consuming them with foods rich in vitamin C to improve its absorption.
