Ingredients:
- ½ cup quinoa
- 1 handful of kale
- 1 onion
- small handful of coriander
- 2 tablespoons of olive oil
- 1 handful of cranberries
- Juice from 1/2 lemon
- 1 handful of crushed almonds
- Salt & pepper
Preparation
- 1) Cook the quinoa according to the instructions on the packet, drain and put into a bowl
- 2) Steam the kale leaves 5-10 min until tender
- 3) In the bowl, combine the kale, quinoa, chopped coriander, chopped onion, crushed almonds, and cranberries.
- 4) Salt & pepper, then add the lemon juice and the olive oil just before serving
Tip:
Cranberries are rich in vitamin C and fibre. Their health benefits are extremely beneficial: they offer protection against urinary infections, cardiovascular diseases and muscular lesions.
