Kale Salad with quinoa, cranberries and almonds

  • ½ cup quinoa
  • 1 handful of kale
  • 1 onion
  • small handful of coriander
  • 2 tablespoons of olive oil
  • 1 handful of cranberries
  • Juice from 1/2 lemon
  • 1 handful of crushed almonds
  • Salt & pepper


  • 1) Cook the quinoa according to the instructions on the packet, drain and put into a bowl
  • 2) Steam the kale leaves 5-10 min until tender
  • 3) In the bowl, combine the kale, quinoa, chopped coriander, chopped onion, crushed almonds, and cranberries.
  • 4) Salt & pepper, then add the lemon juice and the olive oil just before serving


Cranberries are rich in vitamin C and fibre. Their health benefits are extremely beneficial: they offer protection against urinary infections, cardiovascular diseases and muscular lesions.
