Quinoa salad with avocado, cucumber and nuts

Ingredients

  • 50 g quinoa
  • 1 handful of pecan nuts
  • ¼ cucumber
  • ½ avocado
  • 1 handful of roquette
  • 1 handful of linseed
  • Some pine nuts
  • ½ lemon
  • 1 spoonful of olive oil
  • Salt & pepper

Steps

  • 1) Cook quinoa according to the instructions on the packet (15 mins).
  • 2) Once cooked, drain the quinoa and then on the plate, place the quinoa, cut cucumber, diced avocado, a few rocket leaves, linseed and pine nuts.
  • 3) Salt & pepper and then add lemon juice and olive oil
