Ingredients
- 50 g quinoa
- 1 handful of pecan nuts
- ¼ cucumber
- ½ avocado
- 1 handful of roquette
- 1 handful of linseed
- Some pine nuts
- ½ lemon
- 1 spoonful of olive oil
- Salt & pepper
Steps
- 1) Cook quinoa according to the instructions on the packet (15 mins).
- 2) Once cooked, drain the quinoa and then on the plate, place the quinoa, cut cucumber, diced avocado, a few rocket leaves, linseed and pine nuts.
- 3) Salt & pepper and then add lemon juice and olive oil
