Cold Pepper Soup with Ginger and Tomatoes

Ingredients (for 4 people):

  • 1 Red pepper
  • 1 Green pepper
  • 4 Tomatoes
  • 1/2 clove of finely chopped garlic
  • 1 slice of grated ginger
  • 1 teaspoon of with balsamic vinegar
  • 2 tablespoons of virgin olive oil
  • Salt & Pepper

Steps :

  1. Peel the peppers.
  2. Place the tomatoes and peppers in a blender and mix until nice and smooth.
  3. Add the ginger, vinegar, olive oil and crushed garlic. Salt and pepper.
  4. Mix again for a few minutes. Let the mixture sit for at least one hour before serving. Enjoy!
