Ingredients:
- 2 sweet potatoes
- 4 leeks
- 1 onion
- 1 carrot
- 1 litre of Chicken stock
- 1 bouquet garni
- 1 carton of Coconut Cream
- 2 tablespoons olive oil
- 1 pinch of turmeric
Steps
- 1) Wash and peel the vegetables
- 2) Cut the sweet potatoes, leeks and carrots into small pieces, and chop the onion finely
- 3) Brown the vegetables in the olive oil
- 4) Pour in the stock to the height of the vegetables. Then, add the bouquet garni, salt, pepper and let it simmer for 20 min
- 5) Remove the bouquet garni, add the coconut cream and mix with a hand blender
- 6) Pour the soup into soup bowls and decorate with a pinch of turmeric
