Delicious sweet potato, leek and coconut milk soup

For 4 people

Preparation time: 15 min

Cooking time: 20 – 25 minutes

Ingredients:

  • 2 sweet potatoes
  • 4 leeks
  • 1 onion
  • 1 carrot
  • 1 litre of Chicken stock
  • 1 bouquet garni
  • 1 carton of Coconut Cream
  • 2 tablespoons olive oil
  • 1 pinch of turmeric

Steps 

  • 1) Wash and peel the vegetables
  • 2) Cut the sweet potatoes, leeks and carrots into small pieces, and chop the onion finely
  • 3) Brown the vegetables in the olive oil
  • 4) Pour in the stock to the height of the vegetables. Then, add the bouquet garni, salt, pepper and let it simmer for 20 min
  • 5) Remove the bouquet garni, add the coconut cream and mix with a hand blender
  • 6) Pour the soup into soup bowls and decorate with a pinch of turmeric

Tip

This soup has a binary, beneficial effect, being a fast and effective way to fill up while supplying us with vegetables that are essential to our body.
