Mince Pies

  • 1 x 8 cm cookie cutter
  • 1 x 6 cm cookie cutter
  • 1 x muffin tin

For the pastry:

  • 250 g Chestnut flour
  • 125 g Sweet butter
  • 1 Egg
  • 1 teaspoon Salt
  • 1 teaspoon Brown sugar

For the pie filling:

  • 1 Lemon (zest & juice)
  • 1 Orange (zest & juice)
  • 1 Apple
  • 100 g diced Orange peel
  • 200 g Cranberries
  • 100 g Almonds, very roughly crushed
  • 200 g of Chilean Grapes
  • 200 g of White grapes
  • 180 g brown sugar
  • 2 teaspoons of a mix of cinnamon, green anise, ginger, nutmeg, cloves.
  • 3 pinches of grated Nutmeg
  • 70 g melted Butter
  • 2 tablespoons Whiskey


  • Icing sugar

Steps :

  1. Preparation of the dough: Mix the flour with the butter (cut into small pieces) and a pinch of salt. Add the sugar and the egg. When the dough is homogeneous, roll in a ball, wrap it in film and put it in the refrigerator.
  2. Wash, peel and dice the apple. In a saucepan, place the apple with the ingredients for the garnish. Cook for 1h30 to 2h (try to make the filling the day before so that all the flavours have time to mix).
  3. Preheat the oven to 160 ° C.
  4. Take the dough out of the refrigerator and spread it out (3 or 4 mm thick).
  5. Using an 8 cm diameter cookie cutter, cut out circles of dough and put them in the muffin tins. Place 2 spoonfuls of filling on each tartlet.
  6. With a 6 cm cookie cutter, cut out 12 stars in the dough and decorate the tarts.
  7. Bake for 15 minutes until the Mince Pies are golden brown. Decorate with icing sugar and leave to cool.


Mince pies are sweet tarts originating from Great Britain. They are traditionally served during the Christmas period.
