Quinoa Patties

Ingredients:

  • 150g of Quinoa
  • 2 eggs
  • 1 tablespoon Rice Flour
  • 50g grated Parmesan cheese
  • ½ Carrot
  • ½ Cucumber
  • 2 Shallots
  • 1 clove of garlic
  • 3 tablespoons of olive oil
  • Salt, pepper

Preparation:

  1. Rinse the quinoa and cook it as indicated on the package.
  2. Peel and finely chop the shallots, garlic and carrot. Gently cook these vegetables without browning them in 1 tablespoon of olive oil.
  3. Mix the quinoa, shallots, garlic, eggs, chopped parsley, flour and parmesan cheese. Salt, pepper
  4. Use your hands to scoop out a small amount of the mixture and shape them into a flat patty. Place these patties in a pan and cook them with just a drizzle of oil for 5 minutes on each side. Once cooked, take off the excess oil with kitchen roll.
  5. Serve immediately with a salad
