Ingredients:
- 150g of Quinoa
- 2 eggs
- 1 tablespoon Rice Flour
- 50g grated Parmesan cheese
- ½ Carrot
- ½ Cucumber
- 2 Shallots
- 1 clove of garlic
- 3 tablespoons of olive oil
- Salt, pepper
Preparation:
- Rinse the quinoa and cook it as indicated on the package.
- Peel and finely chop the shallots, garlic and carrot. Gently cook these vegetables without browning them in 1 tablespoon of olive oil.
- Mix the quinoa, shallots, garlic, eggs, chopped parsley, flour and parmesan cheese. Salt, pepper
- Use your hands to scoop out a small amount of the mixture and shape them into a flat patty. Place these patties in a pan and cook them with just a drizzle of oil for 5 minutes on each side. Once cooked, take off the excess oil with kitchen roll.
- Serve immediately with a salad
