- 6 large potatoes
- 100 g diced smoked bacon
- 100 g grated cheese
- 100 ml light cream 15%
- Salt pepper
- Boil the potatoes for about 25 minutes in water. They must remain firm. Drain and let them cool.
- Cook the bacon in a frying pan.
- Hollow the potatoes into the shapes of boats. Cut out the flesh of the potato and place into a large bowl and mash with melted butter, cream, grated cheese and the cooked bacon. Add salt and pepper.
- Put on the oven grill.
- Fill the the potato boats with the mashed potato mix and place under the hot grill until the mash has turned into a golden brown.
These potatoes are gluten-free so suitable for people suffering from celiac disease and gluten intolerance.
