Salmon Rillettes

For 4 people

  • 400 g of salmon fillet
  • 500 ml of fish stock
  • ½ bunch of chives
  • 20 g of semi-salted butter
  • 4 tablespoons fresh cream
  • 1 creamy yoghurt
  • Juice of a lemon
  • 4 pinches of Espelette pepper
  • Salt pepper

Steps :

  1. Remove the skin from the salmon, making sure there are no bones.
  2. Immerse the fish in a saucepan with the fish stock and cook on a low heat until it starts to boil. Let it cool in the stock and then drain it on paper towels
  3. Wash and cut the chives finely, cut the butter into pieces and leave aside
  4. Crush the salmon in a large bowl, add the butter then the cream and stir until all the ingredients are incorporated. Add the yogurt, salt, pepper, lemon juice, chives and Espelette pepper. Mix well and it’s ready!


This is the ideal accompaniment for an aperitif with friends. Much better than all these industrial biscuits and cakes found at the supermarket. For an even more healthy option, you can accompany your salmon rillettes with raw vegetable sticks (carrots, cucumbers …)
