Courgettes stuffed with Quinoa

  • 4 round zucchini
  • 100 g of quinoa
  • 250 ml of water
  • 1 onion
  • 200 g of button mushrooms
  • 1 carrot
  • 1 tablespoon of olive oil
  • 50 g grated Parmesan cheese
  • Salt pepper

Steps :

  1. Preheat the oven to 180 ° C.
  2. Peel the mushrooms and carrot and cut into small pieces. Peel and cut the onion finely. In a drizzle of olive oil, fry the carrots gently, then add the onions and lastly the mushrooms.
  3. Wash the quinoa and add it to this mixture. Pour in the water and cook until all the water has evaporated.
  4. While the mixture is cooking, cut the tops off the zucchinis and remove their pulp.
  5. Once cooked, add the quinoa, parmesan and fill the zucchini. Cook for 15 min.


Quinoa possesses loads of nutritional value and acts as a natural replacement for pasta, bread and potatoes. It is also suitable for people suffering from gluten intolerance.
