Ingredients:
- 4 round zucchini
- 100 g of quinoa
- 250 ml of water
- 1 onion
- 200 g of button mushrooms
- 1 carrot
- 1 tablespoon of olive oil
- 50 g grated Parmesan cheese
- Salt pepper
Steps :
- Preheat the oven to 180 ° C.
- Peel the mushrooms and carrot and cut into small pieces. Peel and cut the onion finely. In a drizzle of olive oil, fry the carrots gently, then add the onions and lastly the mushrooms.
- Wash the quinoa and add it to this mixture. Pour in the water and cook until all the water has evaporated.
- While the mixture is cooking, cut the tops off the zucchinis and remove their pulp.
- Once cooked, add the quinoa, parmesan and fill the zucchini. Cook for 15 min.
